Craig's Tomato-ey Tuna Rice

Hiya! hehehe

Ok, here's me recipe for tuna rice.

It's very easy, you can throw almost anything in really.

Ingredients

2 Tins of Tuna Fish
2 Tins of Chopped Tomatoes
1 Large Onion
1 Bulb of Garlic
about a teaspoon of Crushed Coriander Seeds
a teaspoon of Crushed Cumin Seeds
a Pinch of Salt
Some Ground Black Pepper Corns
Rice! (about 2/3 mugs)
Chilli Peppers of Choice
about 5 Medium Mushrooms


Reet!
I cook in a big wok, it helps

Chop the mushrooms into quarters, get them frying.

Chop the onions and garlic and get them frying too.

Keep an eye out for the ingredients getting too hot and burning, especially the garlic.

Once the mix has started to reduce down and go translucent (about 5 minutes on medium heat)
add the two tins of tuna (open the motherfuckers first and take the tuna out though.)

Then add in the 2 tins of tomatoes,
again open them first and tip the shit in, throwing the tins out (to the recycley bin).(Hey that ryhmes!)

Use your motar and pestle (hehe not "motorised pizzle" don't go to Anne Summers)

to grind the cumin, pepper and coriander seeds down

chuck em in, hoy in the chillies too

How much chilli to use, really depends on you, if you like it hot, put in about 5 birdseyes
if you just like a bit of a kick, put in one jalapeno

Basically stir it about from time to time, boil the rice, rinse it and add it.

"How much rice?" Well I tend to make - as I said - about 2 mug fulls

(or 2 mugs full, depends on if you want to wash 2 mugs or not! hehe)

I go by the colour, actually, I want it to be still quite red from the tomatoes
not pink, you know? from too much rice.
But the sauce is quite strong, so dilute it down with the rice.

The type of rice doesn't matter, you could use basmati, broken basmati, long grain, American, easy cook -
uncle ben's, aunt fanny's, I don't give a fuck -
wild rice - fuckin uncooked rice, make yo mistakes that's what cooking's all about! :)
