Craig's Chicken Stock

Hi fellow cookieez

I made some Chicken Stock for the first time in my life :)

I've yet to use it, so I'll have to update this page when I have used it but the method is as follows

You have to listen to Les McCann- "The Harlem Buck Dance Strut" When you make Chicken Stock!


Ingredients

Chicken Carcass - Skin, bones, ligaments everything - even the puk puk
1 Carrot
4 Brocolli Spears
1 Onion With skin on (just take the top mucky bit off and chop the roots off)
5 Cloves of Garlic Leave the skin on but bash em
1 Birdseye Chilli
Fresh Thyme
Fresh Rosemary (Dig up Fred West)
Salt n Pepper Corns


Wot a did

Right, talk about simple,
chop everything and leave it simmering in a large-ish pan for about 3-4 hours.

If any scum rises to the top (including simon cowell) skim it off n chuck it at y'mother

When the mix has reduced down, pour the mixture through a sieve,
over an empty pan.

That's it - stock!!! Lush!!!

I cooled mine down by putting it in to a cool bowl,
and letting it sit in a sink of cold water until the mix was cold.

I then put some in ice cube bags and the rest in a tub in the fridge.

Use the fridge one within 3 days, and the frozen one within about 2 months.



You have to admit, my cookery advice is a motherfucker! Isn't it?!
